Great Grilling Recipe–Chicken (or Pork) Souvlaki

When we go to our favorite Greek/Italian recipe in town, you can pretty much count on my ordering a chicken souvlaki wrap with extra sauce and extra tomato. Now that we live even further out than before, I have come up with my own recipe.

First gather your ingredients: fresh lemon, olive oil, cumin, garlic salt, sumac, and oregano–and chicken thighs (or pork if you prefer).

For one pound of boneless, skinless chicken thighs, I used:

2 tsp cumin

2 tsp oregano

2 tsp garlic salt

1 tsp sumac

Juice from 1/2 a large lemon

1/4 or so of olive oil

Stir the ingredients together to make a paste:

Add your meat and stir well to ensure that it is thoroughly coated on all sides.

Grill over a hot fire until cooked through.

I love it with tzatziki sauce. My favorite comes from Costco.
