Summer Cobbler

There are so many fruits in season right now that are just great in cobbler. I love cobbler because it is SO easy to make.

Cobbler filling

6 cups of sliced peaches (you can use frozen) or substitute your favorite fruit–follow the recipe on the minute tapioca box.

1/4 cup minute tapioca

3/4 cup sugar

1 tsp cinnamon

Stir this together and allow to sit for at least 15 minutes to hydrate the tapioca.

Cobbler batter

1 stick of butter (salted)

1 cup self rising flour

1 cup sugar

1 cup milk

Melt the stick of butter in a 13 x 9 pan at 375 degrees until it is completely melted. Whisk together the sugar and flour and then whisk in milk. Pour the batter evenly over the butter.

Spoon the fruit evenly over the batter.

Bake the cobbler at 375 degrees for 50 to 65 minutes until brown and the fruit juice is clear and bubbly.

Absolutely delicious with vanilla ice cream!
