
I don’t know what these are called, but they are easy to make and DELICIOUS, dangerously so. For this batch, I bought 2-20 oz packages of vanilla candy coating, I used 6 sleeves of Ritz crackers, and a large jar of creamy peanut butter (generally I prefer super crunchy, but it is harder to work with for this application.) Since it’s the holidays, I used some cute holiday sprinkles on top, but you can skip that.
Melt your candy coating in a large metal bowl set over a large pan of simmering water stirring occasionally. In the meanwhile, take your peanut butter and crackers and make little sandwiches with them. Line 4 baking trays with waxed paper.
Stir your candy coating to ensure that it is completely melted and smooth. Drop a cracker sandwich into the coating and flip it over with a fork, and let the excess coating drip off. Place it onto the tray. Continue until you have a tray that is finished and add your sprinkles if you are using them. Continue with the remaining cracker sandwiches in this manner until you have coated them all. I had about 1 tbsp of candy coating left at the end. If you aren’t confident about your candy making, you might buy a little extra coating, or only make 5 sleeves of cracker sandwiches.

It took me about 45 minutes to do all of this, but this is another recipe that I have made nearly every year, so I am a practiced hand at these.
