Strawberry Elderflower Spritz

There is a recipe in the May issue of Southern Living for a Strawberry Shrub that you use to make a strawberry spritz and that sounded interesting, and I happen to have A LOT of strawberries that I need to do something with.

Strawberry Shrub

1 quart strawberries, hulled and sliced

1 1/2 cups sugar

2 cups unfiltered apple cider vinegar

Combine ingredients in a large food container and stir until the sugar is dissolved. Store in the refrigerator for 2 days. Strain the solids from the liquid using a fine mesh strainer. Store in the refrigerator for up to 3 months.

Strawberry Elderflower Spritz

3 oz strawberry shrub

3 oz club soda or seltzer

1/2 ounce St. Germain liqueur

1 ounce vodka

Stir together and serve over ice with a strawberry for garnish.
