
I made some cherry wood smoked chicken to go with all the salads we made this week. I used the same techniques as are used in this YouTube video. https://www.youtube.com/watch?v=nd1rM3CsoN0&t=23s&ab_channel=Tasty
This technique may look intimidating, but it really isn’t. I had to watch the video several times the first time I made turkey this way, but I can tell you that I’ll never roast a turkey whole again. It’s so much better done this way–and it’s fully cooked in about an hour.
Smoked Chicken Salad (or Turkey)
5 1/2 cups of chopped Smoked Chicken Breast
2 Granny Smith Apples Chopped (I leave the peel on)–you can also substitute Gala apples
1 1/2 cups chopped toasted pecans
1 cup chopped sweet onion (Vidalia is my favorite)
2 1/2 cups shredded sharp cheddar cheese
1/2 a jar of poppy seed dressing
3/4 cup mayonnaise
1/4 cup honey
Salt to taste (I didn’t add any because the chicken is well seasoned using the dry brine)
Put chicken, apples, pecans, onion, and cheese in a large mixing bowl and stir to combine. Add remaining ingredients and stir well until all ingredients are thoroughly combined.
*You can add dried cranberries, or red grapes to this recipe.
