Cajun Hash

I needed to use up some baby potatoes that were starting to sprout, so I washed about a pound of them and boiled them until they were just tender. In the meantime, I thinly sliced about 8 green onions. I drained the potatoes and let them cool a bit so that I could slice them into about 1/4″ slices. At this point, I put them in the fridge because I was prepping them the night before I planned to use them for breakfast.

The next morning, I heated my braiser and added a couple tablespoons of bacon fat and heated it until it was melted. I added my potatoes and my onions and sprinkled them with about 1 tsp of cajun seasoning (you can use whatever you like). While these were cooking, I cut up 12 oz of pork andouille sausage–first in half lengthwise, and then into 1/4″ slices. I cooked the potatoes, stirring occasionally, for about 15 minutes until they were getting brown and then I added the sausage and about a cup of bell pepper cut into a medium dice. I covered the pan and let it cook for about 5 minutes and removed the lid and let them cook another 5 minutes uncovered. Then we ate it. My husband LOVED it.

Ingredients:

2 tablespoons bacon grease, or oil

1 lb. baby potatoes boiled until just cooked and sliced in 1/4″ slices

8 green onions sliced thin

1 tsp cajun seasoning

12 oz andouille sausage

1 cup diced red bell pepper
