Meal Prep–Chana Masala

Whereas my husband could eat Mexican food multiple times a week, I could eat Indian food multiple times per week. We’re doing all vegetarian this week, so this was an easy call. My husband also loves Indian food, just not quite as much as Mexican food.

I found a recipe for Chana Masala on the internet and I made a double batch.

I wanted to make this low carb, so I decided to use riced cauliflower instead of rice. You can do whichever you prefer.

I started by putting 2/3 cup of the frozen cauliflower in the bowls.

Then I put about a ladle and a half of the Chana Masala on top.

So now these are ready for lunch or dinner for the week.
