Poblano Peppers

I couldn’t find poblano pepper plants this summer so I had to start them from seed, and I didn’t get them in the ground until late. We are getting some really cold weather this week, so I went ahead and picked the peppers. This is how I prepped them for the freezer:

First I put them on a rimmed baking tray spaced evenly.

I broiled them on high until they began to blister and char and flipped them over and did the same on the other side.

I put them in a food storage container with the lid on to let them steam to loosen the skins.

I let them steam for about 10 minutes.

I put on latex gloves and ran them until cool water and removed the skins and seeds/membranes.

I laid them out on a sheet of plastic wrap in a single layer.

I folded the plastic wrap over.

I folded this up.

This little packet fit perfectly in a quart size freezer bag. I love poblanos. They have a lot of flavor, but aren’t too spicy.
