Sweet and Salty Peanuts

I have been making these for a long time and have literally made hundreds of pounds of them over the years. This is another easy one.

4 1/2 cups raw spanish peanuts (you will need to buy 2 lbs.)

2 cups sugar

1 cup water

Kosher salt

Preheat oven to 300 degrees.

Combine nuts, sugar and water in a large pot and cook over medium heat stirring frequently until all the water has been absorbed. When you take the nuts off the heat they should become sugary looking. Spread them evenly on a greased baking tray and sprinkle with kosher salt. Bake for 20 minutes and remove from the oven and stir. Return to the oven and bake for 20 minutes more. Remove from oven and allow to cool completely. Store in an airtight container.

I cooked 10 lbs of nuts in about 2 hours–I have a two ovens in my stove which helps me roll through these quickly. We pack these in plastic coated paper “coffee” bags and give them as gifts during the holidays.
