I love lemon squares. They are one of my favorite desserts–so tangy and lemony. Yummy perfection. Sometimes, however, the ratio of crust to filling is disappointingly even and I prefer more filling to crust.
Here’s what I do to boost the ratio. I use a 15 x 10 pan and make 1 1/2 recipes of crust (meant for a 13 x 9 pan) and a double recipe of filling. To make the filling even more wonderfully lemony, I add the zest of two lemons to the filling recipe.
Since these are thicker than standard, I had to turn off the oven and leave the pan in it to set up the filling and stop the top from browning too much.
