My husband has a workout 3 or 4 times a week that starts at 5:30 a.m. On those days, he doesn’t want to eat a big breakfast at home, so he needs something with a lot of protein that’s easy to pack up and take with him. We found just the thing on our trip to Highlands, NC last year–Chia pudding with granola, fruit, and jam. I had it everyday for breakfast while we were there and my husband finally tried it on the last day and was an instant convert. When we got home, I had to figure out how to make it. Enter the Google search. I found a recipe and I have tweaked it some.

Chia Pudding:
1/2 gallon coconut milk (you can use any type of milk, but this is the kind that the Blue Bicycle in Highlands used)
2 cups of Chia seeds
1/4 cup honey
1 1/2 tablespoons of vanilla
1/2 teaspoon of salt
Pour everything in a large bowl and whisk together until thoroughly combined. Cover with plastic wrap and set in the refrigerator for an hour. Remove from refrigerator and whisk again and pour into a 3 quart storage container, or into individual to go containers.
To serve, you top with granola. (Here is a link to my high protein Nutella granola :https://cathyathomeontheriver.com/2023/10/21/high-protein-granola/) Then top with berries of your choice (I prefer blueberries because they will stay good all week whereas other berries don’t), sliced banana, and a dollop of jam (if desired). This packs a ton of protein–it will keep my husband full until lunch time.
Note: This is great for when we have overnight guests because we can set everything out and let them fix it however they want.
