Sweet Potato Harvest

Last week, we decided to dig up our sweet potatoes. My husband had taken down the fencing so that the deer could eat as much of the greens as they wanted because it would make our job easier. I planted about 40 plants, and some of them didn’t make it. We probably ended up with closer to 30 plants that survived through the summer. (This area isn’t covered by our sprinkler system.)

Here’s the harvest right out of the ground:

I washed them and laid the ones that were in good shape to store (about 45 lbs) on large trays and I processed the small and damaged ones (about 15 lbs) into sweet potato puree with no seasoning or water and froze them. I will use that for sweet potato casserole and possibly sweet potato pie.

These really huge ones weigh over 2 lbs each. Crazy.

I was hoping for a better yield–rule of thumb is about 3 lbs per plant–but since we’ll struggle to get through these, I guess I don’t have anything to complain about.
