Bruschetta with Whipped Feta, Balsamic Fig Jam, and Walnuts

I love this recipe because you can put it together well in advance and it seems fancy and it’s delicious.

Start by making the Bruschetta:

I used a sliced Italian loaf from Aldi and Olive Oil spray.

I laid the bread on a rimmed baking tray and sprayed both sides with the olive oil cooking spray.

I baked them in a 250 degree oven for 23 minutes on each side until they were dry and crispy.

I let them cool completely and put them back in the bread bag to store them.

Whipped feta

I drained the feta completely and crumbled it into the bowl of the food processor and add about 5 or 6 tablespoons of whole milk ricotta.

I processed it until it was completely smooth. I put it in a food storage container for a couple days.

Fig Balsamic Jam

I emptied the jar of jam into a bowl and added about 3 tablespoons of balsamic glaze to in and combined thoroughly. I put it back in the jar to store it.

Here’s the final result with candied walnuts from Trader Joe’s on top:

Yummy!

I’m going to broil some red onions to put on these too.
