Banana French Toast

I made a triple batch of banana bread to use up some bananas that I had in the freezer. It had been a few days since I made it and it was getting a little dry. So, I sliced it thin–about 1/2 inch.

Laid it in on a parchment lined baking tray and toasted it in the oven till it was starting to turn brown.

Then I made a quick custard mixture–3 eggs, 1 cup of milk, 1 1/2 tsp of cinnamon, and 1 1/2 tsp of vanilla extract and put it in a casserole dish.

I soaked each slice in the custard mixture and cooked it in butter over medium heat.

Until both sides were brown.

Then I whipped up a flavored butter spread to put on top:

1 stick salted butter softened

1/2 cup of maple syrup

1 large ripe banana

3/4 cup peanut butter

I put all of this in the food processor.

And processed until smooth.

This butter would be good on just regular french toast or pancakes, but it is especially good on the banana bread french toast.

This was a delicious improvised breakfast!
